When you interview for new jobs, do your yearly job performance reviews, network, or whenever appropriate, make it clear you have bigger goals. While you will have to work out of their home, if you are in charge of everyone else, and all those projects, that's equivalent to being a project manager at a company.

Even though I am an EA with over 15 years of experience at the C-level, it seems that all the recruiting agencies I have approached still require an applicant to come in for an appointment to take their basic employment testing, and then only seem to be able to offer lower-level administrative jobs. It is ingrained in them.

When people would ask me in interviews, my first answer was, “No nepotism here!” I found every single one of my jobs through a temping agency or by referral. I learned through informational interviews that I should apply to temp agencies.
