However, even after taking many classes on the various programs I still haven’t gotten any new tasks. It’s such a shame that there aren’t more managers who are good mentors that help each individual grow and learn more in their roles. You also have more negotiating leverage for a better salary and projects.

You can ask in the interview in a nice way. There are others who mean well, but never have enough time to mentor you. While you won't ever know until it's too late, try to find the boss that can already say they promoted their last couple of assistants after 2 years WHILE you are interviewing for the job.

You dislike the idea of having a coach/mentor because you can (and should) handle things on your own. I have shared in articles and podcast interviews that I am a recovering workaholic, a recovering people-pleaser, and a recovering perfectionist. Every time I was called on in class, I was sure that I was about to embarrass myself.
